- 2 tbles sunflower oil
- 1 chopped onion
- 2 sliced green chillies
- 3 fat garlic cloves sliced
- Fresh curry leaves
- 2 tsps curry powder
- 1 tsp turmeric
- 1 tsp ground cumin
- 1tsp ground coriander
- 1 tsp red chilli powder
- Salt to taste
- 1 tsp sugar
- 3 whole cardamom pods
- 500 gr mixed vegetables
- 1 can (410g) chopped tomatoes
- 1 can (410g) rinsed and drained chick peas
- 8 mini ciabatta rolls
- Heat oil in a large saucepan.
- Fry onions until soft and lightly browned
- Add chillies, garlic, spices, curry leaves and fry together for a minute.
- Add tomatoes and vegetables.
- Cover and simmer for about 30 minutes until cooked through.
- Halfway through cooking, add chick peas.
- Cut the tops off the mini bread rolls and gently scoop out the bread inside and fill the bread ‘bowls’ with the curry.
- Garnish with chopped coriander.
Make sure to cook your curry on a medium heat so that it remains saucy adding a little bit of water if needed.
If using larger sized loaves of bread, halve or quarter the loaf.
Scoop out the bread to form a bread bowl.
