SPICY GNOCCHI WITH TOMATO AND BASIL

Gnocchi are essentially pillowy little floating clouds of comfort food! Deliciously Italian with a spicy twist this makes a perfect quick and easy midweek meal!
Ingredients
  • 500gr Gnocchi ready made
  • 1 tbsp Olive oil
  • 1 Onion medium chopped
  • 3 Garlic cloves, chopped
  • 2 Chillies, finely chopped
  • 1 tbles.Tomato paste
  • 1 x 400g can Tomatoes chopped
  • 2 tsp Brown sugar
  • 1 handful English spinach leaves
  • 1 handful Basil leaves
  • Parmesan cheese for garnishing
Instructions
  1. In a saucepan, bring two litres of salty water to a rolling boil and drop the gnocchi.
  2. Boil for 2 minutes after they come to the surface of the water, then drain.
  3. In a saucepan fry the onion, garlic and chillies in the olive oil until soft and fragrant.
  4. Add the tomato paste, canned tomatoes and brown sugar, and simmer, stirring occasionally, for 25 to 30 minutes.
  5. When the tomato sauce is nice and thick stir through the gnocchi, spinach and basil and season with salt and freshly ground black pepper.
  6. Garnish with more chopped basil and some freshly grated Parmesan cheese and serve immediately.
