Packed with cheesy deliciousness these gorgeous savoury muffins are the perfect alternative for breakfast or lunch box snack. Bake these in advance and you’ll have a protein-rich meal that’s ready when you are.
  • 3 Tbles Olive Oil
  • 1 Medium Onion (Finely Chopped)
  • 300g Pkt Baby Spinach (Finely Chopped)
  • Salt and Black Pepper to Taste
  • 6 eggs
  • 3 Tbles Cream Cheese
  • 1 cup Mature Cheddar Cheese (Grated)
  • 100g Feta (Coarsely Crumbled)
  • Sesame Seeds for Decorating
  1. Preheat the oven to 180º C.
  2. Prepare muffin pan with cooking spray and line with baking paper squares to form a muffin case.
  3. Heat olive oil in a large pan over medium-high heat.
  4. Add onions and sauté until onions are soft and translucent.
  5. Add spinach and sauté for one minute.
  6. Remove onions and spinach from heat and let cool.
  7. In a large bowl, whisk together the eggs salt, pepper the and cream cheese.
  8. Stir through the mature cheddar cheese and feta cheese.
  9. Add the spinach and onion mix to the egg mixture and fold through.
  10. Spoon spinach mixture equally into each muffin cup.
  11. Scatter over the sesame seeds and bake for 25 minutes until golden and puffed.
