Butter Chicken

Boneless pieces of chicken cooked in butter with tomato sauce It is a favourite speciality all over India. This is my version. Hope you enjoy it!
For Marination
  • 1kg chicken cut into small pieces (preferably boneless)
  • ¼ cup greek yoghurt
  • 1 tbles lemon juice
  • 2 tbles olive oil
  • 1 tsp each of coriander, cumin and red chilli powders
  • 2 tsps each of ginger and garlic pastes
  • salt to taste
  • a few drops of edible orange-red color (optional)
  • 1 tbles cornflour
For Gravy
  • 4 tbles butter or ghee
  • 4 large very ripe tomatoes skinned and liquidised
  • 1 tsp each of coriander, cumin, red chilli flakes
  • salt and sugar to taste
For Garnishing
  • ½ cup fresh cream
  • Chopped coriander leaves for garnishing
  1. Heat the oven to 180° C
  2. Mix the ingredients for the marinade well and rub into the chicken pieces.
  3. Let it marinate for at least 2 hours, or overnight if possible for best results.
  4. Bake the chicken for approx 20 mins or until just cooked through.
  5. You do not want to overcook it otherwise your chicken will be dry.
For the gravy
  1. Heat the butter on medium level in a heavy-bottomed pan and add all the ingredients for the gravy.
  2. Cover and cook for about 20 minutes over a low heat until you have a rich gravy.
  3. Add the baked chicken, to the simmering gravy.
  4. Mix well.
  5. Cover and simmer on low heat for about 10 minutes or till the curry is thoroughly heated through.
Garnish with a swirl of fresh cream and finely chopped coriander leaves.
