This is a budget friendly quick and easy delicious recipe perfect for a midweek family meal. Mouth-watering cheesy tuna pasta topped with grated cheddar and baked.
  • 250gr penne pasta
  • 50gr butter
  • 1 medium onion finely chopped
  • 1 green chilli chopped
  • 1 clove garlic sliced
  • 250gr chopped mushrooms
  • 100g corn
  • 2 cups finely chopped spinach
  • 2 x 170g cans tuna, drained
  • 200ml ready made cheese sauce
  • salt and black pepper to taste
  • 50gr cheddar, grated
  1. Heat oven to 180°C
  2. Bring a pan of water to the boil. Add the pasta and cook, following the instructions on the pack , until tender.
  3. In a large sauce pan, melt butter and add onion and braise until soft and translucent.
  4. Add chilli, garlic and mushrooms.
  5. Saute until the mushrooms start to soften, approximately 2 minutes.
  6. Add the corn,spinach and tuna and stir until the spinach has wilted.
  7. Stir through the cheese sauce until well blended.
  8. Season with salt and pepper to taste.
  9. Transfer to a baking dish and top with the grated cheese.
  10. Bake for 15-20 mins until the cheese on top is golden and starting to brown.
