Coconut Milk Tart

Thanks to my late friend Anne for this very yummy milk tart that we used to demand she serve us at every book club she hosted. Anne said at the time: "This recipe has been circulated in our family for about 40 years and has travelled all over the world with friends and family."
  • 125g Butter
  • ½ cup Sugar
  • 1 cup Marie biscuits or similiar finely rolled
  • 1 cup Coconut desiccated
  • ½ cup Four
  • Pinch of Salt
  • 4 heaped tbles Cornflour
  • 3 Eggs seperated
  • ½ cup Sugar
  • 1 litre Milk
  • 2 tbles Butter
  • 2 tsps Vanilla extract
  • Pinch of Salt
  • Biscuit Crumbs and Cinnamon
  1. Cream sugar and butter, add dry ingredients.
  2. Press into two pie dishes saving some crumbs for garnishing.
  1. Mix cornflour and yolks of eggs with half of the sugar (1/4 cup) and 1 cup of the milk.
  2. Bring to boil rest of milk with the butter.
  3. Remove from heat and add cornflour mixture.
  4. Return to heat and thicken stirring continuously.
  5. Lastly add stiffly beaten egg whites, vanilla essence, salt and rest of the sugar.
  6. Pour into bases.
  7. Sprinkle crumbs and cinnamon onto top of tarts.
  8. Bake for 20 minutes at 180°C
