  • 1 Cup Sugar
  • ⅓ Cup Melted Butter
  • 4 Eggs
  • 1 Cup Flour
  • 1 Tsp Baking Powder
  • 3 Cups Milk
  • ¼ Cup Desiccated Coconut
  • 1 Tbles Lemon Rind
  • Cinnamon Powder for Decorating
  1. Preheat the oven to 180ºC
  2. Spray a round pie dish with cooking spray
  3. Add the sugar with the melted butter, eggs, flour, baking powder, coconut, and lemon rind and mix well.
  4. Lastly, add the milk, stir well and let it stand for about ten minutes.
  5. Pour the prepared batter into the pie dish, sprinkle with cinnamon and bake for approx 30 minutes.
Serve hot or cold.
