CHEESY SWEET CORN FRITTERS

Make these crispy sweetcorn fritters for dinner and pack the rest for lunch. These tasty fritters make a delicious starter or snack and can be ready in a matter of minutes. Serve your sweetcorn fritters with a sweet chilli sauce or for an added kick with some chilli mayo.
Ingredients
  • 410 g Can Cream Style Sweetcorn
  • 1 Cup Grated Cheddar Cheese
  • ½ Cup Red Pepper finely Chopped
  • ½ Cup Onion finely chopped
  • 1 Cup Baby Spinach finely chopped
  • 1 tsp Green Chilli Paste or ½ tsp paprika
  • Salt to taste
  • 2 Eggs
  • ½ Cup Milk
  • 1½ Cups Self Raising Flour
  • Oil for frying
Instructions
  1. In a large bowl, mix together the corn, grated cheese, red pepper, chopped onion, chopped spinach, green chilli paste or paprika and salt.
  2. Add the eggs and milk. Stir until well combined, then mix in the flour.
  3. In a large sauté pan, heat ½ inch of oil over medium heat. Drop spoonfuls of batter into the oil to form fritters, flattening the tops slightly.
  4. Do not crowd the pan.
  5. Cook for 2 minutes on each side, or until golden. Drain the fritters on paper towels.
  6. Repeat with the rest of the batter, adding more oil if necessary.
  7. Serve warm, with your favourite dipping sauce.
