These moreish muffins have a lovely nutty flavour and are light and moist. Perfect for lunch boxes or weekend treats.

Banana Muffin Recipe

Banana Muffins

  • 1 cup cake flour
  • ½ cup nutty wheat flour
  • ½ cup desiccated coconut
  • ¾ cup brown sugar
  • 1 cup mashed ripe bananas
  • ⅓ cup melted butter
  • 2 eggs
  • ⅓ cup greek yoghurt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp mixed spice
  • ¼ tsp salt
  1. In a medium bowl mix flour,coconut, baking powder, baking soda, salt, and spices and set aside.
  2. In a separate bowl mix sugar, eggs, melted butter, and mix well combined.
  3. Add mashed banana and greek yoghurt and mix well.
  4. Fold in flour mixture gradually into the liquid ingredients until combined.
  5. Fill greased muffin tins two-thirds of the way full.
  6. Top with garnishing.
  7. Bake in a preheated 180°C oven for 20-25 minutes.
For garnishing sliced bananas and flaked almonds
